In Search Of Shrimp And Grits
March 23, 2013 – 2-3pm on WDUN AM 550
Join us on March 23th as we go in search of that wonderfully delicious, southern staple… Shrimp and Grits. Although there are many recipes for this one dish it is always a stand-out at any dinner or breakfast.
Our guests on the show will share their special reasons why shrimp and grits, make a delicious combination in so many different ways.
Our guests:
Nathalie Dupree Chef and author of the cookbook Shrimp and Grits will join us on the show. She is most famous for her approachability and understanding of Southern cooking, having started the New Southern Cooking movement now found in many restaurants throughout the South. She has also authored ten other cookbooks about entertaining, the American South and basic cooking. Natalie has hosted television shows on the Food Network, The Learning Channel, PBS and has been featured with Bobby Flay, and on several morning shows: The Today Show and Good Morning America. She is spokesperson for Wild American Shrimp and writes for the Post and Courier in Charleston, SC where she lives with her husband Jack Bass.
We welcome Nathalie to the show, we are excited to have her join us. The two time winner of the James Beard award for her cookbooks will clear the air on what makes this southern dish the belle of the ball!
Chef Dave Synder will join us to share what makes his recipe “top of the menu” at his restaurant, Halyards. Chef Dave over the past twenty eight years has pursued his passion for cooking from New England to the South. In 2000, he opened Halyards and in 2006, opened Tramici both on beautiful St. Simons Island, GA. These two sister operations, along with Halyards Catering, comprise Halyard Restaurant Group where he is owner and executive chef.
The Georgia Restaurant Association named Dave a finalist for Restaurateur of the Year in 2012 and selected him as one of four chefs to represent the GRA’s Georgia Grown program in 2013.
Halyards, where shrimp and grits are served up hot and yummy, is ranked the Island’s and region’s most popular restaurant (along with Tramici’s). In our search for shrimp and grits… we found Chef Dave and Halyards, and said “yum…so good… so delicious!” We welcome Chef Dave to the show and promise not to smack our lips while he’s talkin’.
With all of the talk about Shrimp and Grits we know you’ll have a challenge keeping your stomach from growling, so we a have great place to calm hunger and have you saying, yum, yum between bites. The Longstreet Cafe in Gainesville, GA offers Shrimp and Grits on Saturday evenings. Clemente Valdez, the evening manager, will share how foods from his hometown and region in Mexico helps inspire the dishes he creates in North Georgia. His special Shrimp and Grits recipe is so close to the low country version, you might think you’re sitting on the dock as the shrimp boats come in.

And, we have something special for our foodies who love to travel for the local cuisine. On the show we will have a sneak preview of the The Wild Georgia Shrimp Festival, also known as the Shrimp and Grits Festival coming up in September. Held each year on Jekyll Island, GA, the festival is a must for those who love their shrimp … and their grits.
Anna Hall, is the Communication Specialist, Social Media Manager and Editor of Beachscape magazine for the Jekyll Island Authority. Every September, Hall looks forward to the always thrilling, signature Jekyll Island event: the Wild Georgia Shrimp & Grits Festival. During these three days of feast and frenzy, families and guests flock to the island to not only dig into the best of coastal cuisine, but also experience the legendary atmosphere of the island, shop to their hearts content and of course, stop by our Craft Beer corner. This year, Hall can’t wait to again promote the family-favorite festival to bring even more crowds to this herald showing of Southern hospitality. She will stop by to give us details on how to get involved, where to stay and what the event is all about! Jekyll Island is a treat in itself and early planning for accommodations gives you an advantage for the best places to stay. Anna will fill us in on how to start planning now for a vacation that will provide family fun and will be tasty too!
Annita’s co-host friend will be Doc Bill with Sapelo Island Birdhouses.
