Doc Bill’s Spicy Shrimp and Okra

Hi, Doc Bill here with the afternoon question – What’s on the dinner table tonight?  If you’re looking for something quick, easy and tasty, I have the treat for you.  Spicy shrimp and okra.  You get both protein and veggies all together.  This dish is great for family dinners or an appetizer when you are the party host.

With only a few ingredients, you can spend the bulk of your time sorting out which wine or beer goes best with such a yummy addition to the menu. And, for the kids around the table, a citrus punch made with lemons and limes would be a perfect match.

Culinary Travel is my thing!  But, I’m not always on the road trying new dishes.  At home, I like to bring the world to my dinner table. With the spicy shrimp recipe, I start right here at home with fresh Georgia shrimp. You can buy them right off the shrimp boats when on the coast. But, if a drive to South Georgia is not in your immediate future, check out your local seafood markets.  You know – The one where you can always find something new, unusual and different. Otherwise, pick-up a pound of the freshest shrimp at your local grocery store and you are set.

I also made a tasty dipping sauce. It’s an international treat! I take you all the way to Asia with a Thai chili sauce called Sriracha sauce.  It makes the perfect sauce to bump up the spice  – with just a little dip or a big dunk.

Not familiar with this sauce!  Sriracha is a typical hot sauce or chili sauce made using chili peppers, salt, garlic, sugar and distilled vinegar.  The name may sound familiar to some.  It is derived from the coastal city of Si Racha located in the Chonburi Province of Eastern Thailand.

In Thailand, it is used as a dipping sauce too. You will also find Sriracha sauce in Vietnamese cuisine. Spring rolls and fried noodles are a great combo. Pick up a bottle at any supermarket. Yummy, tasty and spicy hot!

Ready to get started?  Here we go:

Doc Bill’s Spicy Fried Shrimp and Okra

Two pounds of fresh Georgia Shrimp. Peel and devein

Season shrimp with garlic, salt and pepper

Prepare an egg wash using two eggs and one cup of water. Add two teaspoons of Tabasco sauce. Dip the shrimp into the egg wash and place in a paper or plastic bag containing two cups of all purpose flour. (Dip only a couple at a time to avoid sticking and losing some of the batter.)

Preheat Canola or veggie oil in a hot fryer or large frying pan. I used a Fry Daddy for this one. Heat to 350-370 degrees

Cook shrimp until golden brown. Take them out and place on a rack or paper towel to drain excess oil 

Now you’re ready to cook your okra.

Complete the same process for eight large okras that have been cut in half, length wise

Fry until golden brown

 Make a Sriracha dipping sauce with

1/3 cup of ketchup 2 tbs of Sriracha sauce
